Spicy Mushroom Soup

Ingredients
50 g dried mixed mushrooms
625 ml vegetable broth
300 g onions, chopped
50 g butter
50 g flour
1 L milk
½ tbsp bell pepper powder, hot
1 tbsp freshly squeezed lemon juice
2 tsp salt
1 ½ tbsp soy sauce
250 g sour cream
2 tsp dill, chopped
dill for garnish
Preparation
Pour boiling vegetable broth over mixed mushrooms in a bowl and let them swell for about 15 minutes.
In a large pot, steam the onions and butter until translucent, add the flour and sauté while stirring for 2-3 minutes or let them brown slightly.
Then slowly stir in the mushrooms with their liquid and let them thicken over medium heat while stirring.
Add milk and pepper powder and simmer for 5 minutes. Season with the lemon juice, salt and soy sauce. Fold in half of the sour cream and dill.
Serve the soup with a dollop of sour cream and a small sprig of dill.
