Newfoundland & Labrador form Canada's easternmost province and offer a unique culinary landscape rooted in its maritime heritage, rugged landscape, and rich cultural traditions. The provincial cuisine combines fish and seafood, local ingredients and traditional recipes.
With extensive coastlines and rich fishing grounds, Newfoundland is known for its excellent seafood. The province's specialities include cod, lobster, crabs, mussels or scallops. Salmon fishing also has a long tradition in Newfoundland & Labrador. In our Taste of Canada recipe booklet you will find a suitable recipe for it: grilled salmon with berry compote. Bon appétit!
Traditional dishes often contain hearty ingredients such as salted fish, root vegetables, game and canned meat. The most popular dishes include Jiggs Dinner (a boiled dinner with salted beef or fish, cabbage and root vegetables), Toutons (fried dough) and pea soup with dumplings.
At the “screech-in” ceremony, a cultural ritual, newcomers are humorously welcomed into the community by kissing a cod and drinking a shot of screech (rum).
