Maple Syrup Walnut Butter Cake

Ingredients
300 g butter
165 g liquid honey
325 ml maple syrup
5 eggs
500 g whole wheat flour (or 420 g flour type 405)
½ tsp salt
½ tsp potash
2 ½ tsp baking powder
330 ml milk
175 g walnuts, roughly chopped
12 walnut halves for garnish
Preparation
Preheat the oven to 180°C top and bottom heat. Mix butter with a hand mixer at the highest level until creamy, mix in honey and maple syrup.
Separate the eggs, whisk together the yolks and stir into the butter mixture. Beat egg whites until very stiff.
Mix flour, salt, potash and baking powder into the mixture, alternately with the milk.
Fold in walnuts and whipped egg whites. Pour the mixture into a greased springform pan (Ø 28 cm diameter) and bake for approx. 50 — 60 minutes.
Let the cake cool down and place a walnut half on the edges for each piece of cake.
