Whisk egg yolk, mustard, lemon juice, a few drops of tabasco and a few dashes of Worcester sauce in a bowl. Then slowly stir in the olive oil and whisk in constantly to make mayonnaise.
Chop smoked salmon, capers, shallots, chives and parsley into small pieces and mix with mayonnaise. Season to taste with salt and pepper.
Toast the white bread and cut out the rings, cut the cucumber into thin strips. Spread the salmon tartare on the bread slices, garnish with cucumber strips and flowers.
