Potato Salad with Salmon

Ingredients

  • 4 medium potatoes, cooked
  • 125 ml Italian dressing
  • 170 g canned salmon, cut into pieces
  • 50 g celery, cut into pieces
  • 1 green onion, sliced
  • 50 g green and red peppers, diced
  • salt and pepper to taste
  • lettuce leaves, tomato and cucumber slices for decoration

Preparation

Heat potatoes from the previous day on high heat in the microwave for about 2 minutes, peel them if necessary, and cut them into pieces. Pour half of the dressing over the potatoes, mix gently and refrigerate. Leave to marinate for a few hours or overnight. Just before serving, add the rest of the dressing and the remaining ingredients (except the lettuce leaves, tomato and cucumber slices) and carefully fold in. Arrange lettuce on lettuce leaves and decorate with slices of tomatoes and cucumbers.
