Cranberry Apple Bran Muffins
Ingredients
- 75 g cranberries, dried, roughly chopped
- 130 g wheat flour (type 550)
- 75 g wheat flour
- 30 g bran flakes
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp allspice
- ½ tsp nutmeg, grated
- 50 g pecans or walnuts, roughly chopped
- 1 apple, peeled and grated
- 225 ml milk
- 6 tbsp honey
- 1 tbsp vegetable oil
- 1 egg
Preparation
- Preheat the oven to 160° C
- Mix all dry ingredients in a large bowl and add the apple.
- In a second bowl, mix the milk and honey well, add the oil and the egg and mix thoroughly.
- Form a well in the dry mass and pour the liquid into it. Mix all ingredients together and knead to a smooth dough.
- Grease 6 muffin tins (or use paper cases) and fill ¾ of each with batter. Bake in the oven for about 15 — 20 minutes.
