Maple Mousse with Fruit Coulis

Ripe fruits are best for this recipe

Ingredients
For the mousse
100 ml maple syrup
25 g sugar
4 eggs, separated
100 ml cream
For the fruit coulis
150 g peaches
150 g passion fruit (passion fruit)
100 g sugar
Juice of a lemon
Preparation
Boil the maple syrup in a small pot and let it cool down.
Mix sugar and the four egg yolks until the sugar is dissolved, then add the maple syrup while stirring until a light mass is formed.
In one bowl, whisk the four egg whites until stiff, in a second bowl, whip the cream until stiff. Fold both into the maple syrup mixture.
Pour the cream into a bowl and refrigerate for at least 2 hours.
Peel and puree the fruit, pour in the sugar and continue to puree until the mixture is creamy, then add the lemon juice.
Press the mixture through a sieve so that a soft puree (coulis) is obtained.
To serve, pour the maple mousse into flat glasses and cover with coulis.
