Ingredients
675 g bison fillet
For the marinade
60 g butter
juice and zest of a lemon, untreated
1 clove of garlic clove of tabasco
3 tbsp grated onions
3 tbsp brown sugar
1 tsp ground coriander
½ tsp ground cumin
½ tsp ground ginger
¼ tsp teriyaki sauce ground pepper to taste
pepper to taste
wooden skewers, approx. 22 cm long
Preparation
Cut the bison fillet into strips.
Melt the butter in a casserole and add all the ingredients for the marinade, bring to a boil and cook on low heat for five minutes.
Pour the mixture over the meat and let it marinate in the refrigerator, covered, for at least 8 hours, turning occasionally.
Remove the meat from the marinade, put it on the wooden skewers and set the marinade aside.
Fry the skewers on the grill for 5 - 6 minutes, turning once. Make sure the meat doesn't get too firm.
Heat the preserved marinade and remove it from the stove just before it boils, set aside and then drizzle over the fried meat.
