Canadian Spring Wine Foam with Cranberry Syrup

Ingredients

For the wine foam

  • 60 ml maple syrup
  • 8 egg yolks
  • 1 ½ tbsp Canadian Vidal ice wine
  • lemon juice

For the cranberry syrup

  • 125 ml water
  • 100 ml maple syrup
  • 3 ½ tbsp cranberries

Preparation

  1. Pour 60 ml of maple syrup into a large enough stainless steel bowl. Add the egg yolks and whisk until frothy.
  2. Add the ice wine and whisk again. As soon as the mixture is smooth and foamy, place the bowl in a water bath (over a small pot of simmering water).
  3. Continue beating the mixture until a stiff wine foam with a volume of approximately twice as large is formed. When the wine foam is whipped stiff, remove the bowl from the heat. Season with a few drops of lemon juice.
  4. For the syrup, bring water, maple syrup and cranberries to a boil in a pot while stirring and allow to cool. Drain through a sieve.
  5. Divide the wine foam over 4 martini glasses and garnish with cranberries and syrup.
